Why would you apply/tap/hit the brakes with a rig with open differentials?

This have to do with that BS that if there is a little load placed on the wheel not getting any traction that it will cause the diff to transfer power to it hopefully pulling you out of your situation.

Never could get that to work, tried regular brakes and tapping a few clicks on the e-brake

Yes actually it does.  It does work but you have to it them harder than you probably think.  Of course it's not as good as a locker but might work in certain situations.
